Sauvignon Blanc - Duc de Chapelle. Vin de Pays Comte Tolosan 2007

Aromatic Sauvignon, typically grassy with zesty lemon and lime character and lively fresh acidity. Exotic
gooseberry and grapefruit flavours develop on a well balanced palate ending with fresh rounded acidity.

Colombard Chardonnay - Duc de Chapelle. Vin de Pays Cotes de Gascogne 2007

A dry, refreshing combination of aromatic, lemony Colombard which has been carefully balanced with
Chardonnay to add depth and roundness.

House Red

Cabernet Merlot - Duc de Chapelle. Vin de Pays de L’Aude 2006/07

Modern techniques have produced this bright red wine which retains the natural fresh fruit character.
This Cabernet Merlot is soft and mellow with ripe berry flavours and is smooth on the mouth.

Cabernet Sauvignon - Los Caminos, Colchagua Valley, Chile 2006

This soft and supple Cabernet Sauvignon is well structured and rich with blackcurrant and cherry fruit.
The palate is ripe with cassis and plum flavours backed by soft, rounded tannins.

House Rosé

Cabernet Rosé - Domaine de la Grande Courtade 2006/07

A salmon pink rosé made by the ‘saignée’ method of bleeding the fermenting juice from the skins.
Dry with a perfumed bouquet of summer fruits, vibrant fruit on the palate and crisp acidity.

Tribaut - Brut N V

The Brut Réserve blend is given three years age on the lees before release. This allows the development of fine,
persistent bubbles, fruit, lemony and yeasty aromas with a well balanced palate

Rosé Wine

Pinot Grigio ‘Ramato’ - Il Barco, Veneto, Italy 2006/07
 
A delicate salmon pink rosé with a delicate perfumed aroma of peach and rose petals and soft, red fruit
flavours on the palate. It is dry and well balanced, excellent to drink with fish and white meats.

Champagne

Tribaut - Brut Rosé N V

Made from red grapes only and blended to achieve a delicate salmon pink colour. Delicate aromas of
summer fruits and a complex well flavoured palate enhanced by a minimum of 4 years ageing
 
Laurent Perrier - Brut N V
 
Pale gold in colour with a delicate and complex nose, with hints of citrus and white fruits. Fresh and easy on the palate,
with full flavours, plenty of fruit, good balance and length

Moët et Chandon - Brut Impérial N V

Medium in weight and fruit, with a fine strong mousse. A generous wine of great elegance to which the
Chardonnay contributes hints of brioche and hazelnut

Semillon Chardonnay - Copperstone Creek, South Eastern Australia 2005/06

A clean palate, crisp and balanced with a persistently long finish. Good ripe creamy texture and citrus
notes make this Australia’s most popular blended white wine.

Pinot Grigio - Portenova, Veneto, Italy 2006/07

A typical Pinot Grigio with a brilliant straw yellow colour, elegant perfume of acacia flowers, almonds and
dried fruit. A soft, well-balanced palate combines citrus, exotic fruit and fresh apples. Elegant and dry.

Gewürztraminer - Paul Zinck, France 2006

The marl and limestone rich vineyard produces full aromatic Gewürztraminer with the subtle perfume
of roses, lychees and cinnamon with dry acidity and mineral nuances

Sauvignon Blanc - Wairau River, Marlborough, New Zealand 2006/07

Classic expression of the dry, gooseberry, grass and passion fruit style of New Zealand Sauvignon Blanc.
This fashionable white wine is a benchmark by which New World Sauvignons are judged. Awarded a
Gold Medal at the prestigious Royal Hobart Show.

Chablis - Domaine Nathalie & Gilles Fèvre, France 2006/07

The nose is intense with peach, pear and citrus aromas balanced with a very distinct minerality. The
palate is rich and intense with a very nice mineral balance.

Sancerre ‘les Longues Fins’ - Domaine André Neveu, France 2006/07

This single vineyard Sancerre has the added complexity of mineral and herbaceous flavours on the
palate. The immense long flavour of gossberries and blackcurrant leaves lingers on the finish.

Pouilly Fuissé ‘les Crays’ - Domaine Auvigue, France 2006

Rich with mineral flavours while a brief maturation in wooden cask adds spice and complexity. A blend
of both stainless steel and oak cask fermentation are used and this helps capture the delicious rich ripe
flavours and classic terroir that is unique to these vineyards.

Puligny Montrachet - Domaine Jean Pascal, France 2006

This Puligny is elegant, not overly oaked and retains a lovely concentration of butterscotch and
hazelnuts, and finishes with complex flavours of brioche and cinnamon.
 
 
Red Wines

Shiraz Cabernet - Copperstone Creek, South Eastern Australia 2005/06

The intensity and structure of the Cabernet and the spicy fruit richness of the Shiraz are a fantastic
combination and ideal blend to make a wine that is easily enjoyable with good length.

Rioja Crianza Azabache - Bodegas Aldeanueva, Rioja, Spain 2004

Well balanced with a soft character, it is in the traditional style of Rioja having been aged for 3 years in
oak & bottle before release and exhibits intense fruits with hints of vanilla and a soft rounded palate.
 
Reserve Merlot - Vina La Playa, Colchagua Valley, Chile 2006
 
Ruby red wine with complex aromas of vanilla and toasted oak, sparked by ripe black plums and sweet
cherry jam. In the mouth rich black stone fruit abound followed by spicy oak

Bourgogne Pinot Noir - Domaine du Prieuré, France 2004/06

This Bourgogne Pinot Noir is from a tiny 2 hectare plot just outside the Savigny appellation. It extols the
virtues of pure Pinot fruit with captivating ripe perfume and soft silky balance. A Savigny in all but name.

Fleurie - Domaine Dubost, France 2006/07

Fleurie has a distinctly floral bouquet of violets and summer fruits. A very fruity wine with an aroma of
wild strawberries and lush ripe flavours.

Nuits St Georges ‘Vieilles Vignes’ - Domaine Alain Michelot, France 2001/03

This wine comes from 75 year old Pinot Noir vines, which contribute an astounding depth and richness
for a village Nuits. It has considerable weight, extraction, ripe fruit character and big, soft tannins, all
contributing to a long satisfying finish.
